Tomizawa Shouten Co., Ltd., one of Japan's largest specialty stores for confectionery and baking ingredients and equipment, was founded 106 years ago and is pleased to announce that at the 2025 Japan Cake Show Tokyo, sponsored by the Tokyo Confectionery Association (a public interest incorporated association), held from Tuesday, October 14th to Thursday, October 16th, 2025, our Jiyugaoka Studio confectionery instructor, Shinya Kyubi, won a silver medal in the Grand Gateau category and a bronze medal in the rice flour category, while Fuka Fushimi won a bronze medal in the gift category.

Following on from last year, Kyubi has won in two categories for the second consecutive year, and Fushimi has also achieved the remarkable feat of winning for the second consecutive year.

■ Grand Gateau Category "Silver Award" Winner: Shinya Kyubi

Comment on the cake
: "I tried to make the decorations and appearance simple yet beautiful. The flavor is rich with chocolate, black tea, raspberries, and rose. Rose tends to have a strong scent, so I transferred a little of the scent when making the homemade puree, resulting in an elegant cake with a subtle rose scent."

■Rice flour category "Bronze Award" winner: Shinya Kyubi

Comment on the work
: "Taking advantage of the inherent properties of rice flour, I created a tart and cake base using apple and caramel as the base. Inside, I've filled the dough with jam made from homemade baked apple puree and apple pâté de fruit, so you can enjoy different textures. The appearance was designed with the image of the 'whiteness of rice' and 'autumn moon viewing.'"

■Gift category "Bronze Award" winner Fuka Fushimi

Comment on the work
: "I wanted to make a Sachertorte that had never been seen before, so I created this piece. I used white chocolate for the appearance and finished it off with glass arrows to create a texture similar to Sachertorte. To give it a truly Japanese taste, I wrapped castella cake with the aroma of cherry blossoms in homemade cherry blossom bean paste."
