We are pleased to announce that we will be holding a bread-making workshop in Tokyo, with Chef Shuichi Osawa of .BREAD as our instructor
Tomizawa Shouten is organizing this training course as part of its technical support for baking professionals. The aim is not only to share techniques and knowledge that can be used in the field, but also to create a platform for interaction and information exchange among those involved in baking, ultimately fostering the formation of a lasting community
This time, the theme is "Fermented Foods and Spices."
Chef Shuichi Osawa, who led the Japanese team to its first-ever overall victory at the World Bread Championships, will be our instructor. He will demonstrate how new textures and flavors can be created by combining fermented foods and spices.
The workshop will feature demonstrations of product development using Chef Osawa's original flour mix, as well as bread-making suggestions that utilize fermented foods, spices, and unique Japanese ingredients. Participants will learn the mindset and techniques for maximizing the appeal of each ingredient. There will also be a tasting of bread baked by Chef Osawa on-site

Mr. Shuichi Osawa
The owner and head chef of ".BREAD". He trained under Koji Nishikawa of the renowned Kobe bakery "Sa Marche" and achieved the first overall victory for a Japanese team at the World Bread Championships. Utilizing his world-class skills and free-thinking approach, he offers a wide range of products, from everyday breads to original creations
